Roasted Chicken with Pomegranate Gravy is POM Wonderful!! 

A few weeks ago POM Wonderful asked me if I wanted to try some 100% Pomegranate Juice. I am usually anti juice but this is 100% juice and also from the amazing pomegranate! My husband and I use to purchase this products years ago but since having Avery I seemingly forgot about it. I decided to research the product before I said I would try the product. 

I pretty much only drink water and milk in this house.  We stock orange juice for the hubs and occasionally get a special chocolate milk from our local milk dealer.  Avery loves juice from getting it at other houses and is constantly asking for it all the time. It can be hard to find a juice that is actually 100% juice and has not natural fillers in it. POM on the other hand is a bit different its made out of 100% pure juice from concentrate. No other ingredients, no harmful colors added, no fillers or flavors. Got to love that. Now with a 100% Juice the sugar in an 8 oz container is a bit high at 32 grams of sugar. This sugar is a natural occurring sugar but still is pretty high amount of sugar. I recommend cutting the juice with water or really limiting how much you drink each day. With that being said,  if you are going to grab a coke instead or a juice that isnt 100% think again about this great juice! POM has lots of great information on the website for you to learn why the juice they make is a good option for you!

Avery had some of this great juice and is in love. I kept an empty bottle of the juice (did I tell you they are so cute, but not a huge fan of it being plastic)! I poured a very little bit of the juice in the bottle and added water to really cut down on the sugar and it seems to make her happy over her regular choice of milk. Its not something she will get on a regular basis but for us it might be the best juice choice compared to what others give her.

I decided to also make a recipe out of this since I like to cook and pomegranates seem like a wonderful fall recipe! Last week Whole Foods had a sale on some whole chickens, so I thought the combination would be great together. I have only really made Beer Chicken before so I decided to roast one. I kind of threw some ingredidents together and am so happy with the results, it truly was a great tasting chicken that I cant wait to make for family some day!! This would be a great holiday dinner!!

Roasted Chicken

  • 1 3lb Chicken
  • 1 Lemon
  • 1 half onion
  • 2 tbsp of butter (softened)
  • Thyme
  • Rosemary
  • 4 cloves of Garlic
  • Olive Oil
  • Chicken Stock
  • Salt and Pepper

Preheat oven to 350 Degrees. Clean out chicken and place in on roasting rack or pan. Stuff chicken with half a cut lemon, 2 cloves of garlic, a few springs of rosemary and thyme and season with a little salt and pepper. Tie the drumsticks together with kitchen twine. In a small bowl, mix butter, thyme, rosemary, lemon juice and a clove of garlic to make a herb butter. Lift the skin of the chicken up and rub chicken with butter. Rub outside of chicken with olive oil and squeeze lemon juice from second half of lemon. Add fresh ground pepper and salt all over the chicken, thyme, rosemary and 1 clove of garlic minced.  Pour Chicken stock over chicken and fill the bottom of the pan with an inch of liquid.  Place into oven and cook for about 2 to 2 1/2 hours. You want the chicken to register at about 180 degrees internal tempature.

*Word of Warning- You house will smell wonderful as this cooks!!

Pomegranate Gravy

  • 2 tbsp Wheat Flour
  • 2 cups of Chicken Stock (I used the stock from the pan)
  • 1/3 cup of Pomegranate Juice
  • Salt and Pepper

In a sauce pan add chicken stock and pomegranate juice until slightly simmering. Once simmer whisk in flour until the gravy is a consistenty that you prefer. If its too runny add more flour, if to thick add more chicken stock. Season with some salt and pepper to taste.

Thanks POM Wonderful, we thought everything was great and this might be the new gravy I make in the future at Thanksgiving! I am hooked!
