Addicting Maple Iced Pumpkin Cookies! 

I have been in a big pumpkin mode lately. The other day I wanted something I could indulge a bit on and this was the recipe of choice! Oh my goodness are these great pumpkin cookies and the frosting, its amazing! On of my favorite blogs, your homebased mom posted this recipe last year from a site, The Good Apple. I am so glad I checked out her source cause I am now hooked on Melissa's blog! WOW her cakes and cookies are beautiful! Very inspiring!

 Maple Iced Pumpkin Cookies

  • 1 C butter
  • 1/2 C brown sugar
  • 1/2 C white sugar
  • 1 C pumpkin puree
  • 1 egg
  • 1 tsp vanilla
  • 2 C flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt

Cream sugar and butter.  Add pumpkin, egg and vanilla.  Add remaining ingredients.  Drop spoonfuls onto non-greased cookie sheet.  Bake at 350 degrees for 10-12 minutes.

Frosting:

Boil 3 Tbsp butter and 1/2 C brown sugar until mostly smooth (Approx. 2 to 3 minutes)  Cool and add 1/4 C milk and 2 C powdered sugar or until desired consistency and whip with hand mixer until smooth.  Spread onto cookies.

Enjoy! Just beware they are hard to stop eating!

Ohhhh, YUM. These look so delicious!! I can't get enough pumpkin lately. I've also been craving maple syrup (which is weird, before this pregnancy I never really liked the stuff) so these are right up my alley!

Man, I hate I did not see this icing recipe before I attempted cream cheese icing w/ fat free products that did not harden for my pumpkin cookies! I will try this next go round!!

I had some problems with the icing. I used this recipe because I was hoping for something other than the plain old icing used on most recipes. But after boiling the brown sugar and butter for 2 minutes, it hardened to a rock upon cooling. Also, "maple" is a bit of a misnomer as there really isn't any maple or maple flavoring. The icing is more of a caramel.

Shanno- sorry yours didn't turn out right. Mine never got hard at all and I have made it a couple of time now. So not sure what the issue was. On the maple part I agree this doesnt have maple in it but this isn't really my recipe so I didn't feel I should change the name of it! I wish they turned out for you cause I really love this recipe!
