Snow Day with Summer Dreaming

I love winter weather and I think my reason is valid! On top of the fun things you can do in the snow and holidays with family, I love the clothes you can wear in winter. I love warm sweaters, thermals,
cute scarves and fuzzy socks. I feel warm and secure in my winter clothes. If I miss out on the gym too many times my winter wardrobe can cover that up.
Summer on the other hand, exposes all the things I try not to be self conscious about. So why on earth am I dreaming about summer today? Our winter has been drab, our first big snow of the year happened today.
I love snow but this is the time of year where my body starts yearning for spring. I long to see green grass, birds in the trees and planting new flowers. Spring encourages me to be hopeful and gets my body ready for the warm weather Summer is going to bring.
This year I am actually excited for summer, like I was as a child. Since going to a fairly consistent vegetarian diet, I have energy again. I love going to the gym and working out. I love thinking about going swimming and taking Avery to the Zoo.
I will always hate when our humidity is high and the temps are around 100 but I am optimistic this year that we will enjoy our summer and be out in the sun.
After spending the morning shoveling the 5 inches of snow in my driveway, watching B build Avery a snow slide in the yard and taking some token snow pics, I came in hungry for lunch. Normally I would go for a nice warm bowl of soup or steaming hot cup of cocoa, I went with my favorite summer time sandwich. I love this snack because I usually have the ingredients on hand. It is refreshing and perfect to eat on the deck looking at how beautiful spring and summer can be! I guess today it was perfect for looking outside the window at the snow blowing, dreaming about summer!

That sandwich looks so delicious! It's my favorite summer sandwich, too. I recently used a panini press to make it, and that was a nice twist. I am so ready for spring, too!
