Healthy Baked Oatmeal

Courtney So one of my new favorite blog right now is Modern Gal . I have been following Elizabeth for a few months now and I really love reading all of her posts. She has an awesome story and great advice on finance and healthy living! Her recipe choices seem to pretty much always be ones I would eat and each week on my menu planning I have been including her easy peasy recipes.
This week I made her healthy baked oatmeal and let me tell you, I love it! The flavors all remind me so much of Autumn that even on a beautiful spring day, I long for a cool fall morning! (okay just the thought of it more than the actual day I am loving the current weather!) Some great things about the recipe: it keeps great so can be reheated through out the week, you can make it in a crockpot and you can adjust the flavors for just about anything in season!
Healthy Baked Oatmeal Courtesy Modern Gal
3 cups rolled oats
Pinch of salt
1 teaspoon baking powder
2 Tablespoons ground flax, optional
1 T cinnamon
1 T pumpkin pie spice
1 cup milk, low fat dairy, rice milk or soymilk
2 eggs
1 granny smith apple, peeled, cored and diced
½ cup blueberries, frozen or fresh ( i used blackberries)
½ cup raisins (or dried cranberries)
½ cup applesauce
½ cup chopped walnuts, lightly toasted ( i used pecans, was out of walnuts)
1 T maple syrup (optional, for taste)
1 T melted butter (optional, for taste)
Preheat oven to 350 degrees. Mix dry ingredients (first 4) in bowl with spices. Add all other ingredients and mix to combine. Pour mixture into greased 9X9 pan and bake for about 40 minutes until knife inserted in center comes out clean. Or pour contents into greased crockpot (3 ½ to 4 quart) and cook for 4-6 hours on low until edges are lightly brown and knife inserted in center comes out clean. When slightly cool, cut into squares. Serve with warm milk. Store leftovers in the refrigerator, warming individual portions in the microwave.

I eat slow cooked oatmeal almost every morning for breakfast - I can't wait to try this it looks de-lish! Thanks for sharing.
