Menu Planning with our First CSA Box!!!

So wow, I must say I am very happy that we are done with Memorial Weekend. I had a blast, but am fully exhausted and plan on catching up on my sleep this week! I have noticed that my calendar is starting to fill up for the summer. I am really going to have to keep up during the week to stay sane and have plenty of sleep.

This week we got out first CSA box. This box is us evolving to eating a lot more local foods and helping out our community. It was lots of fun going to the farm and seeing the beautiful gardens growing, the animals they are raising and the plans they have for the future of the farm. I loved it and I love my daughter gets to see how we are helping others out and the different lives they live.  I am super excited for the season to progress.

Our first box was stuffed full of leafy greens and will only get bigger and better as the gardening season progresses!  I am changing my normal habits of menu planning. I usually plan on Sundays and head to the store Monday mornings. Now that we get our CSA on Friday and go to the Farmers Market on Saturday I want to plan around that time. By doing this I want to use what is in season and get as much products as I can at the market.  Since we don't eat processed foods at home, we should just have to go for a couple of things at the store each week.

Here is this weeks menu based on my market finds and CSA Box

Tuesday:Salad with Chicken Strips

Wednesday: Pulled Pork Sandwiches with Sweet Potato Fries

Thursday: Grilled Flank Steak with Chimichurri Sauce and Potato Corn Mash

Friday: Roasted Red Pepper Pasta and Salad

Saturday: Lemon Chili Chicken, Roasted Potatoes and Broccolini
