Easy Kicked Up Roasted Potatoes 

I will admit, I am a potato fan. I love them in so many ways. I think every week you will see some sort of potatoes featured on our menu for the week. I adore them in so many variations, my favorite being just plain ole baked potato with some sour cream dolloped on top. I also love making my Grandmas Potato Salad or Pioneer Womans Potato and Corn Hash, both are an interesting twist from the standards.  Roasted Potatoes seem to be a go to that I have finally perfected and seem to crave with several of my meals. It is so easy to make these and somehow also fill my potato cravings.

Easy Kicked Up Roasted Potatoes

Servings 3

3-4 New Potatoes

Salt

Pepper

Olive Oil

Cajun Seasoning

Cut potatoes into wedges and place them in a bowl. Sprinkle with oil olive and stir around until potatoes are coated. Season with salt, pepper and Cajun seasoning. Place on recycled aluminum foil lined pan, make sure they are not overlapping. This is where I have gotten the potatoes to really work for me. I turn the oven onto 350 and place them right into the oven before it is preheated. This cuts the cooking time down and actually helps to slowly cook them and make sure to crisp them up nicely on both sides. I let them cook and don't turn them (mainly cause I usually forget!) for about 25-30 minutes until the are crispy on both sides. This is the only way my husband will eat them! Nice and Crispy!
