My Favorite Summer Recipe

My blogging this past week has been..lacking! I wish I could say I was doing something incredibly exciting, but I wasn't. We had tons of birthday events going on and were only home a couple of hours a day due to an over booked schedule. In August we are filled with a Canoe Trip, San Diego Business Trip (from Brian, for me it will be a relaxing week on the beach!!), Family Visiting and finally a relaxing vacation on Myrtle Beach with friends. So I plan on relaxing the whole month of July and not really committing to anything but my family. In this time, I plan to get lots of blogging done and also getting some post up for when we will be gone.  Sorry for the lack of blogging but I plan on getting back on track very soon! Also the end of the month is my two year blog anniversary so I need to think of something fun for it!

Works For Me Wednesday is having a theme this week of summer recipes!! I have tons of recipes that I really like but for me this one screams summer to me. I have most of the ingredients growing in my garden so it is super easy to make up one day. It is very refreshing and is a great side to many dishes. It also for me is a perfect lunch paired up with a fruit!

Summer Salad

1 Cucumber

1 Tomato

1 Red Onion

Fresh Dill to Taste (can use dried)

1 cup red wine vinegar

3/4 cup of water

Cut Tomato, Onion and Cucumber into a bowl. Add vinegar and water, stir around. Add dill to taste. Chill until ready to eat. (I think overnight is a good amount of time to get all the elements of the this dish just right!)

Some people add sugar to this dish, I try to leave sugar out as much as possible but if you want add a tablespoon of sugar.
