Oh Garden Goodness!!! Veggie Omelet

Courtney So after having a quiche for dinner the other night, I was in first year garden heaven. I loved having a dish that most of the veggies came straight from my backyard garden. I wanted more but I ate the quiche the night before so fast I didn't even have time to take a picture!
I decided that an omelet would be a perfect little treat and I put my cute little crocs on, marched outside grabbed a bell pepper, chives and jalapeno. The result was just perfect for me and I really enjoyed it for my little breakfast treat.

Garden Omelet

- 1 Bell Pepper, diced
- 1/2 Jalapeno, seeded and diced
- 1/4 Sweet Onion, diced
- 1/4 Pepper jack Cheese
- 3 eggs
- Chives to taste
- Salt and Pepper to taste
- Salsa
- 1 tsp Olive Oil
In a small skillet, heat olive oil at medium high heat. Add bell pepper, onion and jalapeno. Sauté for about 4 minutes. In a bowl mix 3 eggs, salt, pepper and chives, whisk until mixed. Pour over vegetables in skillet. Allow egg to cook, lifting a bit to distribute uncooked egg underneath. Once most of egg has been cooked, add pepper jack cheese to top of omelet. Fold and half and let cheese melt. Remove for skillet, top with some fresh chives and salsa. Enjoy!
