Bluberry Oat Muffins

Courtney We are muffin people in this house. The problem with muffins though it is that most of them are not as healthy as we would like them to be. I like to try new recipes that seem healthier than my favorite double chocolate chip muffins (oh, that isnt healthy?!) When this recipe came though my google reader it immediatly became starred to make for later.
If I could have one fruit on hand for Avery and Brian to share, it would be the blueberry! So when I saw this recipe I thought I would try it for them. Avery had three right out of the oven, so I thought they were a hit. Brian than tried one and said..meh. Meh means its not great but edible. After a few days I ended up getting rid of most the muffins cause no one was really eating them.
I really think they have potentinal and in the future I think I will try the flour with whole wheat pastry flour and more applesauce instead of canola. I am just not a fan of canola oil anymore.

Makes 12-15 muffins
- 1 1/4 cups whole wheat flour
- 1 1/4 cups oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup low-fat buttermilk
- 1/2 cup firmly packed brown sugar
- 2 tbsp canola oil ()
- 1 large egg, lightly beaten
- 3/4 cup blueberries (fresh or frozen)
Preheat oven to 375 degrees.
Line a 12 cup muffin tin with paper cases or spray with nonstick cooking spray. I simple greased and floured a muffin pan, saving the paper.
In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in blueberries. Fill muffin cups 2/3 full.
Bake for 16-18 minutes.

Try full fat buttermilk and coconut oil instead of canola and i bet they'll go up from 'meh' taste-wise and nutritionally!
Ooooh yum! And I like Michelle's suggestion of coconut oil. It's an awesome anti-fungal.

Michelle- I was thinking about doing coconut oil, good idea! I will retry with those subs after going to the berry patch!
