Courtney Gradually I am getting into the groove of being home. Its just so refreshing to know that I have such a wonderful place to sleep in and raise my kids. Many times I feel like our home is too small for our family of three but it really is perfect. We purchased our house new with plans to move around 3 years later. It was a very nice starter home but we had no plans on staying too long. We wanted land, we wanted space to roam and grow our family. Life ensued and we are still living in our house 4 1/2 years later and at the moment I have no desire to move. Our house still fits us and the thought of packing everything is what scares me the most. As my little sister looks for a place to purchase and call her own, I realize that our home is more than sufficient for our needs and that only a few rooms really matter right now.
I plan on cooking some foods that are healthy but will satisfy my need for that comfy home feeling right now!

Monday- Ginger Steak Salad
Tuesday- Southwestern chicken, Corn and Avocado Salsa and Rice
Wednesday- Tomato Soup, Parmesan Crisp and Grilled Cheese Paninis
Thursday- Chicken Pesto Paninis, Sweet Potato Fries and Cucumber Salad
Friday- Out
Since our weekend is still up in the air with it being a holiday and family in town, I am going to wait to plan that later on this week. Hopefully it will be relaxing and not too stressful!

I know what you mean about home. We purchased our home as a starter too, and sometimes I think it really is too small for our growing family, but then there are times I look around and can't imagine ever leaving.
Sounds like a week of great eating! Pesto is my Number One Love right now, so I hope you share the chicken pesto panini recipe!
