Yummy Pumpkin Bars

Courtney I love fall and with the weather cooling down a bit this week, I am embracing my need for fall cooking. My first fall treat are some yummy pumpkin bars. I made the bar a bit healthier than my old recipe but kept the frosting as cream cheese loaded with sugar..... bad me but I couldn't resist, must be the baby controlling me cause in my right mind I wouldn't do it! (just kidding I am a sucker for cream cheese frosting!)

Yummy Pumpkin Bars
- 2 cups Whole Wheat Pastry Flour (could use all purpose)
- 1 cup honey
- 1 cup applesauce
- 2 tsp baking soda
- 2 tsp baking powder
- 2 cups of pumpkin puree
- 4 eggs
- 2 tsp salt
- 2 tsp cinnamon
- 2 tsp pumpkin pie spice
Cream Cheese Frosting
- 1 block of Cream Cheese
- 1 cup confectioners sugar
- 2 tablespoons Maple Syrup (the real stuff!)
- Pecans (for topping, optional!)
Preheat over to 350 Degrees. Mix the dry ingredients together. Mix the wet ingredients until blended. Slowly add dry ingredients until incorporated. Pour into a cookie sheet with rim and cook for 25 minutes. While cooking beat together the cream cheese, confectioners sugar and maple syrup until creamy. Once cake has cooled top with cream cheese frosting and crushed pecans.
