oatmeal chocolate chip cookies, somewhat healthier!

Courtney B was craving something baked the other day and I just wasn't sure what I wanted to make him. I already made some pretty good cranberry orange muffins but I know he wanted some cookies.
The solution was to make our normal chocolate chip cookie recipes with a few things added in and a few things taken out. The cookies had a very chocolatey taste and I think it is because they were the main part of of sugar in the recipe. The also cooked into a very unique consistency. I cant say they were the greatest cookies we have ever had but we actually both enjoyed eating them and B keeps asking for me to make the again! I am not sure how they will turn out next time and really cant guarantee that my recipe will work again but I am sure going to try!

Oatmeal Chocolate Chip Cookies (changed a bit from Thrify Jinxy recipe)
ingredients
- 1/4 cup applesauce
- 2 Tbsp. butter
- 2/3 cup honey
- 1 egg
- 1 tsp. vanilla extract
- 1 cup whole wheat pastry flour
- 3/4 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tbsp ground flax seed
- 3/4 cup quick cooking oats
- 3/4 cup chocolate chips
Preheat oven to 350 degrees. Beat together applesauce, butter and sugar. Beat in egg and vanilla. In a separate mixing bowl, stir together flour, baking soda, flax seed, salt and cinnamon. Stir flour mixture into first mixture and mix well. Then stir in oats, followed by the chocolate. Place rounded tsp-full 2 inches apart on unbleached parchament paper on a cookie sheet. Bake 10-12 minutes.
