what the heck is eech?

Everytime I post anything about eech I get lots of questions on what the heck it is! I too had never heard of it until Thanksgiving this year at my cousins house. It is super simple to make and can be eaten plain or with hummus, pita and mint! The wikipedia defintion of it is "a traditional Armenian side dish made principally from bulgur. It is somewhat similar to tabbouleh but much thicker and grainier (with far less parsley), and not as tangy"

I have seen several variations on the recipe but I love the one I have so stick to it. I usually make this once a week and have it ready for B  to take for lunch or for a quick bite when I am not in the mood to cook!

ingredients

  • 4 regular onions finely diced
  • 1.5-2 cups olive oil
  • 24 oz. crushed tomatoes
  • 8 oz. tomato paste
  • 4 c. fine bulgur pilaf (wheat) ( I get this from the bins at whole foods)
  • salt and pepper to taste
directions
Cook onions in 1.5-2 cups olive oil (I usually only use 3/4-1.5 c.) until translucent.  Add rest of ingredients and combine well.  Turn off heat and cover for 2 hours.
This is one of the easist things to make and great for a quick snack! It totally works for us when we need a quick bite!
