i have never had eggplant......until now thanks to eggplant lasagna!
Thursday, January 28, 2010 at 7:00AM Courtney Yes, its true I had never eaten eggplant before until I decided to make this recipe! I guess Vegan Yum Yum's pic looked so good that I could just not resist to make it and try this interesting vegetable.
I will admit the whole time I was making this recipe I had doubts, lots of doubts. I even sent my husband a text on his way home saying , "dinner might not be good beware". As I went through the steps I just got worried it would taste bad or it would just make me long for a really cheesy lasagna. I thought we had finally hit our first miss when it came to vegan food.
Luckily I was wrong! We both really enjoyed this and even my very picky almost 3 year old ate it all off her plate! I was amazed! The only thing I did different to this dish was add a bit of fresh mozzarella on B's side but it tasted great to me without it!
If you like eggplant and you like bread...give this one a try I am sure you will be pleasantly surprised!

I couldn't live without eggplant! While I don't eat a lot of it, I certainly love it!!
I've only had eggplant a couple of times, and enjoyed it both times. I tried cooking some eggplant parm. once, and it was a big FAIL...my fault, not the recipe's. This lasagna looks SO good...I'm bookmarking it!
Also, I send my husband warning texts about dinner too! I did that last night, in fact! :)

I've never had eggplant either! But lasagna has got to be one of my ultimate favorite pasta dishes. Maybe I will love eggplant lasagna too, who knows? :) There's actually a restaurant near my place that has eggplant lasagna, I'll have to make a note to get that dish the next time I'm there so I can try it out. Thanks!
