Menu Planning, Week One of 2010!

Courtney I love the fresh start of a new year and a beautiful new calendar to put up! After the craziness of the holidays I just fell refreshed with the turn on the year!
Menu Planning has always been a large part of this blog and helps to keep us in order in the kitchen. The only issue I have with menu planning is I can't seem to stick to the plan. This causes us to eat out and in 2010 I am working very hard for that to happen. It is actually getting a little harder for us to eat out with my picky food choices and since most use pretty bad quality of food I like to pass on it.
For Christmas I got two new cookbooks that I am really looking forward to reading and make recipes, this week I am making a couple from Tal Ronnen's The Conscious Cook and Kristin Doyle's Therapeutic Chef. Both books feature vegan recipes which should help me with the issues I am having durning this pregnancy with milk products.

Breakfast: Steel Cut Oatmeal with Fruit and Flaxseeds, Green Smoothies. Cranberry Orange Muffins and Whole Wheat Pancakes
Lunch: Black Beans and Rice, Leftovers, Salads, Hummus, Pita Bread and Eech
Snacks: Celery/Almond Butter, Hummus and Vegetables, Fruit, Popcorn and Kale Chips
Dinners:
- Monday: Southwest Bean and Seed Burger with Baked Fries and Steamed Carrots
- Tuesday: Vegetable Burritos
- Wednesday: Quinoa, Avocado and Sweet Potato Salad
- Thursday: Spinach & Onion Quesadillas with Rice
- Friday: Leftovers or Out
- Saturday: Tomato, Cashew Cheese and Pesto Panini's with Baked Sweet Potato Fries
- Sunday: Lime Grilled Tofu with Slaw and Mashed Sweet Potatoes

Oh my goodness--this menu sounds scrumptious, healthy, and absolutely enjoyable! Do a lot of the recipes come from the two cookbooks you mentioned, or are they your personal creations? I need to try these recipes, so I need to know if I should order the books or if you'll be revealing more of your culinary genius in upcoming posts!
Hi! Found you through the links on Org Junkie. How do you cook your quinoa? I am just starting to use it and have a recipe for it on my menu planner this week, but would like even more options!

I totally know what you mean about eating out. Last night my boyfriend and I were trying to think of somewhere special to go and realized we really just prefer the food we cook at home. Between vegan and gluten-free needs, and, as you mentioned, just a general desire to eat food that is good quality, eating out isn't the "treat" it used to be. All for the best, I suppose!
