Menu Planning! Week 5 of 2010!

Courtney Month One of 2010 is done! Boy that went pretty fast for us and I am hoping that February whizzes by also, I am ready to hold our little girl and not be pregnant anymore for a long time! I am letting myself love being pregnant but can't wait for the end, this time I know we will hear our sweet baby crying! I also am excited to get back into the swing of everything, get use to having two babies, get out in the garden and enjoy going to to the gym again! Oh I am so excited for all that!
In the meantime I am going to enjoy February, relax and help get Avery ready to be a big sister! I am going to menu plan, try to stick to it and be healthy even on the nights where I just want to give in and quit! I can't guarantee you will see a menu plan on week ten and eleven but I sure hope after that I can get back on track!

Breakfast: Green Smoothies, Pancakes, and Toast
Lunches: Leftovers, Bean Burritos (they are just to easy to make and nutritous!) and Peanut Butter & Jelly Sandwiches
Dinners:
- Spinach and Hummus Quesadillas with Jalapeno Quinoa
- Spinach Lasagna Roll-Ups with Green Beans
- Eggplant Parmesean with Steamed Carrots
- Twice Baked Shiitake Mushrooms and Roasted Broccoli
- Home Pizza (Roasted Veggie, Cheese and Heart Cheese for kids) and Salad
- Out
- Superbowl Party: Potato Skin Bar, Chips, Homemade Salsa and Mexican Layer Dip
