I am such a mushroom fanatic and when I hear people are not...it makes me sad. They just have such a great taste and I am super happy my tummy likes them! These mushrooms might not look the most beautiful they are really are great and pack a nice nutrional punch!

  • Mushrooms
  • 1 tablespoon olive oil
  • 1/2 white onion, finely chopped
  • Yellow Bell Pepper, finely chopped
  • 1/2 zucchini, finely chopped
  • Clove of garlic, chopped
  • Tomato, chopped and seeded
  • Handful of pinenuts
  • Basil
  • Salt and Pepper
  • Parmesean Cheese

Clean and remove the steams of the mushrooms.  Heat a skillet to medium heat and saute onions in olive oil, add the bell peppers, zucchini, garlic and saute until tender. Add the tomatoes and pine nuts until the pine nuts are toasted. Season with basil, salt and pepper.

Add your stuffing to your mushrooms and bake for about 15 minutes.  You can serve them like this or add a bit of parmesean cheese on top. Enjoy!
