Roasted Brussels Sprouts with Grapes

Courtney Remember when I said I had a brussels sprouts recipe for you to try...and than you got stuck with all my thanks{squared} post? Well today I am making up for that long silence and finally giving you the recipe! Trust me it was well worth the wait!
I have a confession to make, I never had brussels sprouts until the past year or so. For some reason when my Whole Living Magazine came with this recipe in it, I knew I had to make it. I have definitely made it and added a few things here and there with it. I think I could eat this every single day!
The best part of the recipe is that it is so easy to make, prep is maybe 10 minutes and than you roasted it and its pretty much done! If you haven't ever had or think you don't like brussels sprouts, I think you should give this one a try, you might end up liking them! These deserve to shine at Thanksgiving tables this year...so so good!
Roasted Brussels Sprouts with Grapes
from Whole Living magazine, November 2011
Ingredients:
- 1 lb Brussels sprouts, halved
- 1/2 lb red grapes
- One shallot, cut into slivers
- 2 garlic cloves, minced
- 1 sprig of fresh rosemary
- olive oil
- balsamic vinegar
- Salt and Pepper to taste
- 1/4 cup of walnuts, coarsely chopped
Directions:
1. Preheat the oven to 450 degrees.
2. Place sprouts, grapes, onions and garlic on a parchment paper lined baking sheet. Drizzle with olive oil, sprinkle with salt, pepper and rosemary, than toss to coat.
3. Roast for about 20 minutes until the Brussels sprouts begin to caramelize.
4. Remove sprouts and grapes from the oven and toss with walnuts (you could coat toast these while the sprouts are baking but I like them raw) and balsamic vinegar. Add salt and pepper to taste. Serve warm.
Let me know when I have converted you to brussels sprouts heaven!
